This fluffy “salad” is my go-to summer potluck recipe. I have loved this sweet and smooth pudding since I was a little girl. The ingredients cost under $10, and they are SUPER easy to put together. Usually, I serve the jello in a big bowl, but I discovered how fun it looks when you spread it into a baking dish and garnish it with extra mini marshmallows and crunchy pecans. :)
Ingredients:
1 (3.4 oz) box pistachio pudding mix
20 ounce can crushed pineapple, undrained
8 ounces Cool Whip (thawed)
2 cups mini marshmallows, divided
1 sliced banana
1/2 cup chopped pecans
Directions:
In a large bowl, stir together pistachio pudding mix with the can of pineapple. Fold in the Cool Whip until it’s well-blended. Then stir in banana slices and 1 cup of marshmallows.
Spread the mixture into a 9x13 inch baking dish. Top with remaining marshmallows and sprinkle with pecan pieces. Chill in the refrigerator for at least an hour before serving.

So funny that you posted this! I was at a bridal shower this weekend and someone brought a pistachio cranberry jello salad! A little different but same idea! I had never seen it before and now twice in one week! Looks yummy!

ReplyDeleteOur family makes a very similar salad only minus the banana and pecans. It's my FAVORITE!!! One of my fav meals my mom makes is roast beef with carrots, mashed potatoes, green bean, rolls, and this salad. Any time we have roast beef we ALWAYS have it!!! Love, love, love this recipe!!!
